Most kids like chocolate chip cookies but may not be able to consume eggs, hence this recipe should be in your recipe box.
Today it is very common that many of us have some type of food allergy which can prevent us from eating some of our favorite foods.
This particular no egg chocolate chip cookie recipe is one I’ve been making for the past 4 or 5 years, way back when my daughter’s friend requested an egg free cookie recipe since her son is allergic to eggs. He loved cookies and as a concerned parent she wanted to be sure he had a snack that was safe for him to eat while in school.
There are many cookie recipes that do not include eggs but I thought chocolate chip cookies would be a good place to start for young children. I’m not sure 3 or 4 year olds would appreciate biscotti, though shortbread cookies are always yummy.
I named this recipe in honor of Andy who was the inspiration for this eggless chocolate chip cookie recipe.
I’ve been making these for quite a while, and I’m always excited when I can whip these cookies up while my dinner is cooking. In less than 45 minutes you can make the cookie dough and bake them, cleaning up as they bake, and they are ready for an evening snack with a glass of milk.
All you need to do is blend the butter and sugar, stir in the chips, then blend in the flour and BAKE!
- 1 Cup Butter, room temperature
- 1 Cup Brown Sugar
- 2 Cups AP Flour
- ¾ Cup Chocolate Chips
- 1 tsp. baking soda
- 2 tsp. milk
- 1 tsp. vanilla extract
- Pre-Heat oven 350 degrees
- Cream butter and sugar with electric mixer.
- Add chocolate chips to mixture and stir in by hand
- Add the flour and baking soda and stir by hand then add milk and blend - do not over-mix.
- (If the butter you use has softened too much the batter will be too soft - just refrigerate for 20 minutes before baking.)
- Drop by teaspoonfuls onto greased cookie sheet.
- Bake for 10-12 minutes. Cool for 5 minutes on cookie sheet and then transfer to cooling racks.
This is a very flexible recipe. You can make this a dairy free cookie if you substitute the butter and milk with a butter alternative and non-dairy milk (almond or coconut). I’ve made this cookie many times using coconut milk and the results were excellent — grampy’s discriminating palate never even knew there was a difference.
