Fresh berries are so versatile. Everyone likes them so I use them whenever I can. This weekend we (the boys and I) made the best frozen fruit pops.
I’m still trying to Keep Kool in the Kitchen so making the frozen pops was a breeze.
There are so many yummy, delicious and gorgeous photos of ice pops floating around blogsphere this summer. I thought why not give them a try with the boys. My M.O. was that if they helped me make them they would eat them. It worked!
We didn’t make anything fancy. I just used a simple method of macerating the fruit with a little sugar, then added the juice from 1/2 a lemon and pureed the berries in the blender. DONE!, well when they were frozen they were DONE!
I only have one mold. We had to make several batches to have enough to go around for everyone. I’ll be looking to buy a few more molds. The boys were resourceful and suggested we use paper cups. They were concerned that we should have enough for everyone.
Here is the best part about making frozen fruit pops – you can use any fruit you choose, any summer fruit works. You can add any flavors you wish along with the fruit. Allow additional freeze time if you are adding liquids.
The prep time for the fruit only takes a few minutes work; you will just need to allow 30-45 minutes wait time while the fruit macerates. Of course there is the freeze time. My recommendation is to make these the night before and they will be ready when you need them the next day.
Frozen Berries Fruit Pops
- 2 cups strawberries
- 1 cup blueberries
- juice from 1/2 lemon
- sugar to taste (you can use stevia, agave, maple syrup, honey)
For a healthy treat use a natural sweetener rather than granulated sugar
- You can use fresh berries or frozen or a combination of fresh and frozen. If you use the frozen berries you will need to add a little more time to allow for the berries to defrost.
- Taste the berries first for sweetness and then add your preferred sweetner to taste. Let the berries macerate with the sweetener for about 30 to 45 minutes.
- Place all the berries into a blender with all the natural juices and the lemon juice and blend until they are smooth. Depending on your blender it could take a few seconds to about 30 seconds.
- Pour the mixture into the molds and freeze for about 1 hour. Place the popsicle sticks into the center of each pop and continue to freeze.
- The pops took about 4 hours to freeze. The best results though would be to let them freeze at least 6 hours or more.
- To remove the pops from the mold run the mold under warm water for a few seconds. They will easily slide out of the mold.
The frozen berry fruit pops were refreshing, very tasty and as a parent/grandparent I was happy to give my family a totally healthy treat.
This is also gluten free and you can make it sugar free.
My taste testers gave these frozen fruit pops 5 stars.
