Chocolate Chip Cannoli Sandwich Cookie
is very easy to make for any day, any time, yet it’s special enough to make for parties, bridal or baby showers, or game day.
I just made a batch of chocolate chip cookies for snacks. I never thought that everyone’s favorite chocolate chip cookie would not be the star this week. A few cookies, a cold glass of milk and that’s the end of the story. But no, grampy wanted to ‘stuff’ the cookies with something.
Are you kidding? What ‘stuff’ do you want to put in between 2 cookies that is not loaded with sugar? I was just not in the cookie filling/stuffing mode. “Oh, let’s make cannoli filling,” I hear in the background — he’s not kidding.
My fridge is almost always stocked with the usual ‘Italian staples’ — mozzarella, tomatoes, ricotta, basil, parsley, and yes mascarpone — I always have a container of mascarpone and a package of cream cheese among my staples. So I guess we’re making cannoli filling.
My cookie recipe is adapted from a basic Nestle Toll House cookie recipe. It bakes up to the right consistency to hold the cannoli filling. I always change up the sugar and flour in recipes to meet our dietary needs. Of course you can use your favorite cookie recipe.
This is a simple dessert to make. All you will need is this Easy Cannoli filling recipe, 1 cup of mini chocolate chips for garnish (optional) or sprinkles (optional), and your favorite cookies.

If you are having a party you can also use store bought cookies and make the delicious Cannoli filling which is very easy.
- 1¼ cup AP flour
- 1 cup whole wheat pastry flour
- 1 tsp. baking soda
- ¼ tsp. salt
- 1 cup butter
- ¾ cup brown sugar
- ¼ cup Monk Fruit (or your preferred sweetener)
- 1 tsp. vanilla extract
- 2 eggs
- 1 12 oz. pkg. chocolate chips
- In a small bowl combine the flour, baking soda and salt.
- In a large bowl beat the butter sugar and vanilla until creamy. Add in one egg at a time beating after each addition.
- Gradually add in the flour mixture and mix until well blended. Stir in the chocolate chips.
- Using a cookie scoop drop dough onto parchment lined baking sheets.
- Bake for 9 - 12 minutes or until golden brown.
- Cool on baking sheets for a few minutes then remove to wire racks to cool.
About a half hour before serving lay out 2 cookies for each sandwich, place 1-2 tablespoons of cannoli filling on one cookie and place a second cookie on top of the filled cookie. Roll the edges of each filled cookie in a dish of chocolate chips or sprinkles, this is optional.
Plate and serve. This is grampy’s anytime snack, but I would happily serve this to guests, for any special occasion or for brunch.
