Have you ever made a recipe and it just didn’t turn out as expected? It happens to me often. I either ditch the recipe or keep trying until I get it right.
However this particular recipe left me more disappointed than usual because I expected to at least get a cookie that looked similar to what I saw in the photo.
I found this recipe in our local town pennysaver with no credit to its origin. It was an easy recipe but it was not a cookie.
Blueberry Biscuit Cookie
- 2 cups biscuit mix
- 1 cup fresh blueberries
- 1 cup chopped walnuts or pecans
- 2 TBLS. low fat milk
- 1/2 cup honey, divided
- Preheat oven to 350 degrees.
- In a large mixing bowl combine biscuit mix, blueberries, nuts and milk and mix well then adding enough honey to make a cookie dough like mixture.
- Using a cookie scoop or tablespoon drop dough onto greased (or parchment lined) cookie sheet.
- Bake until edges turn a golden brown, about 15 minutes.
- Remove from oven, cool on wire racks. Sprinkle with powdered sugar. Serve with a side of honey for drizzling and Greek yogurt.
When I tasted the ‘cookie’ I knew it wasn’t a cookie. It was more like a biscuit, then again it had the texture of a scone. I didn’t want to discard it but it needed some sweetness so I added powdered sugar. That wasn’t quite enough so I put a 1/2 cup of Greek yogurt in a dish and drizzled it with honey which I used as a dip for the biscuit/scone/cookie. Turned out to be a light lunch.
Give it a try if you like biscuits and scones. It’s quick and easy!
