One of my favorite things about quinoa, besides it being a healthy grain, is that I can make quinoa patties from the original quinoa dish that is left over.
These patties are made from the leftovers of a grown-up quinoa with peas and bacon side dish.
I’ve been on a bacon kick lately. I really love bacon but make it only once or twice a year, not good for cholesterol, but love it just that same.
The patties become a side dish which compliments chicken, fish, burgers or as a compliment to a green salad for lunch.
We have eliminated the starchy potatoes and rice so the quinoa is filling the empty starchy carb gap and giving us additional protein.
This week the quinoa with peas and bacon was leftover from our supper a few days ago. So I made patties which only takes about 20 minutes for prep and cooking.
It’s a quick dish to make and you can make these in advance and freeze them for future meals.
