Easy Grilled Portobello Mushroom Burger can be a vegetarian option for summer grilling. You can also bake this in the oven when grilling is not an option. This can be a vegetarian burger by leaving out the bacon. I had a few leftovers on this day, so I added them, though this is optional.

If making your own focaccia bread make in advance. Or use your favorite burger buns.

  1. Shred the cheese and set aside.
  2. Slice the tomatoes & wash dry the spinach (or lettuce) leaves.
  3. Grill the portobello mushroom about 3-4 minutes on each side. It should still be a little firm, don’t let it over-cook and shrink – the mushroom should stay ‘meaty’.
  4. Layer the ingredients the way you like on to the bun and enjoy.

Notes

Tips: Increase the number of portobello mushrooms to serve your guests. The topping you use will also need to be increased. This is really easy and it’s a delicious vegetarian option.
