Farro Vegetable Soup

This recipe is based on Trader Joe’s 10 minute Farro. You can use any farro you can find in your market. Cook the farro according to the package directions for soup and add in your favorite vegetables.



  1. In a 3½ quart pot, heat the oil and add in the onion or shallot. Cook until translucent, approx. 3 minutes. Stir in the celery and carrots and cook with the onions for a minute or two.
  2. Add in the farro and mushrooms along with the vegetable broth and water.
  3. Cook for 10 to 15 minutes. Taste for seasoning and add salt and pepper as needed. Garnish with parsley and serve with a hearty bread or the cheddar cheese puffs.
