Tortilla Pizza With Southwest Salsa

Tortilla Pizza With Southwest Salsa is very easy to make with the kids. Everyone can make their own adding their favorite toppings. A great party snack for any gathering and game day. The yield will depend on how many tortillas you use.

  1. Add the peppers, chopped onion, scallions and garlic to the food processor and pulse a few times until chunky. Add in the cubed (or canned) tomatoes, vinegar and honey and pulse a few more times just until everything is your preferred chunky consistency.
  2. Pour everything into a medium bowl. Stir in the corn and beans if using along with a 2 tablespoons of cilantro. Taste for seasoning and add more seasonings as needed based on your taste preferences.

To Assemble The Pizza

  1. Heat the tortillas on a baking sheet for 2-4 minutes.
  2. Sprinkle a little bit of each cheese on each tortilla. Spread a couple of tablespoons of salsa over the cheese, sprinkle more cheese on top of salsa.
  3. Place the tortilla pizzas on a parchment lined baking sheet and bake for 2-4 minutes or just until the cheese is melted.
  4. Cut in triangles and top with fresh chopped tomatoes and cilantro and serve.
