Preheat oven to 350 degrees. ‘Seasoned’ 8 inch cast iron skillet.

  1. Peel the apple, slice 4 wedges in 1/4 inch slices and cut the remaining apple into cubes.
  2. Place into a small bowl or dish and sprinkle with the sugar and cinnamon and set aside.
  3. Add the butter to the skillet and place in heated oven to melt – approx. 5 minutes.
  4. Whisk together the flour, sugar, baking powder and salt – set aside.
  5. When the butter is melted, remove the pan from oven and add the melted butter to the flour mixture.
  6. Place the skillet on top of the stove.
  7. Add the milk and vanilla to the flour, butter mixture stirring well to combine. The mixture should be thin – similar to a thin pancake batter.
  8. Stir in the cubed apples and pour mixture into the skillet. Place the wedges into the center of the batter and place in the oven to bake.
  9. Bake for 45 minutes or until a toothpick comes out clean.
