To Make Fortunes


Preheat Oven to 375 degrees. Line cookie sheet with a silicone mat or parchment paper.

  1. In a medium bowl, sift the flour, sugar and salt – set aside.
  2. In a separate bowl, whisk together the egg whites, sugar, vanilla and/or almond extract until a little frothy.
  3. Add the sifted flour into the egg white mixture and stir until you have a smooth batter.
  4. Drop 1 tablespoon of batter onto the prepared cookie sheet. Using the back of a spoon, spread the batter into a circle about 3 inches.
  5. Bake only 2 or 3 cookies each time so that you can mold the cookies while they are still hot (this part is for adults only, the cookies are very hot).
  6. Bake for 5 to 7 minutes or until the edges are browned.
  7. Quickly remove one cookie at a time and fold in half, placing it on a mug to shape and then place them in a muffin cup to keep the shape as it cools.
  8. When the cookie has cooled the kids can slide in their fortunes into each cookie.
  9. If you are doing this alone you can place the fortune on the hot cookie before folding into shape.
  10. Repeat this process until there is no batter left.
