2 from 1 reviews

Chicken Pot Pie Baked Egg Rolls is an easy recipe for appetizers, side dish or snack. Make the filling in advance – up to 2 days. This will save a lot of time.

The filling can be prepared 1-2 days in advance.

  1. In a 12 inch saute pan, saute the potatoes, carrots and onions for a few minutes – until the onions become a little opaque.
  2. Add in the frozen peas and garlic. Continue to cook, stirring frequently, for about 5 minutes.
  3. If you have leftover chicken, add to the pan and stir in the vegetable broth or bouillon.
  4. Make a slurry with 1 tablespoon of flour and some of the broth and add it to the pan, stirring until well combined.
  5. Cook for a few minutes until the broth thickens. Remove from heat and cool it enough so that you can work with it to fill the wonton wrappers.
  6. FOR OVEN BAKING: Preheat oven at 400 degrees.
  7. Place the prepared egg rolls on a sheet pan into the pre-heated oven.
  8. Bake 6-8 minutes. When the egg rolls are lightly browned turn them over to continue to bake until crispy. Another 4-6 minutes or until they are crispy.

  1. Preheat the air fryer to 330 degrees. Place the egg rolls in the basket.
  2. Cook for 6 minutes and check for browning. Turn over when lightly browned and cook another 3-5 minutes.

TIP: Keep in mind that the filling is completely cooked. Therefore you will be cooking the egg rolls just until the wonton skins are crispy. The timing on this will depend on your oven or air fryer. Calibration is different for each appliance.
