Grilled Shrimp Topped Arugula Salad

Grilled Shrimp Topped Arugula Salad is an easy weeknight meal any time of the year. In winter just broil the shrimp in the oven for 3-4 minutes on each side.



    Shrimp cooks on the grill in about 7 minutes and pretty much the same time if broiled in the oven.

    1. Add the greens to a large bowl and add in the walnuts and cheese of choice.
    2. To prepare dressing, add the lemon juice and olive oil to a measuring cup and mix together with a fork. Add in the salt and pepper and parsley. Set aside
    3. To broil shrimp, place on baking pan and drizzle with olive oil, spread with butter, add chopped garlic and salt & pepper.
    4. Broil for 3-5 minutes on each side.
    5. Add the cooked shrimp to the top of the salad, drizzle with the dressing.
    6. Toss and serve.
