Bread type recipes are a bit different. Blending flours that are unfamiliar takes just a little bit of a learning curve but this recipe was a success from the very first try. Now that I’ve been making this easy 5 ingredient grain free sandwich bread recipe for the last 7 weeks – I’m happy to share it now that it has received a thumbs up from my family.

For the baking molds, you can use large mason jar lids and place them on a baking sheet. I didn’t have large lids so I first used a tart pan which made round rolls. Then my daughter suggested to use a silicone pan, great idea, mine is a square shaped mold.
The size of the molds for the sandwich should be about 3 1/2″-4″. This size mold will allow you to use 1/3 cup of batter to make 3 rolls.

This very quick and easy grain free sandwich bread recipe from www.lexiscleankitchen.com is a delicious alternative for a gluten free sandwich.
- 1/2 cup Almond Flour (blanched)
- 1/2 cup Tapioca Flour
- 1 tsp. baking powder
- Pinch of sea salt (I’ve also used table salt and it was fine)
- 2 eggs
- 1/4 cup unsweetened Apple Sauce
Preheat oven to 350 degrees. Spray the baking pan with non-stick cooking spray.
In a medium bowl, using a fork or whisk combine the flours, baking powder and salt.
Add in the eggs and applesauce and mix until well blended.
Pour 1/3 cup of batter, or equal amounts into the molds and bake in preheated oven for 15 minutes. Use a toothpick to be sure they are cooked.
Cool a few minutes, remove from pan and they are ready to serve.
