The past few months my family’s ever-changing diet is keeping me very busy testing recipes. Everyone seems to have reactions to some of the ordinary everyday foods we always eat. The main issue for all of us is we need to keep things lower in fat and low carb.

That type of diet would definitely send our cholesterol off the charts. Then there are some with very high carbs which is not good for any of our sugar levels. So it has been a bit of a challenge to find recipes that fit our needs.
I have 2 Very Important Rules I follow for new recipes – (1) It must be quick and easy; and (2) will appeal to everyone. Using unexpected ingredients always has my attention so I’m keeping on this mission until the entire family likes everything on the table.
Today I introduce this homemade grain free easy drop biscuit recipe, it’s a simple recipe to make. No rolling out the dough and no biscuit cutter needed. I was able to make this quickly while no one was home.
Just add the dry ingredients to the bowl, then mix in the wet ingredients and drop away onto parchment lined baking sheet. Since I most often make homemade biscuits with our soups and stews grampy just took it in stride and ate the biscuits without question.
Grampy loved the biscuits with the soup we had for dinner. I can’t believe he even told my daughter the biscuits were delicious. I’m finally getting to move forward with my new mission. Hey, every small step we take gets us closer to the goal.
