Dairy Free Rice Pudding Recipe is also refined sugar free. It is easy to make in advance especially when entertaining. This is an easy recipe to add to your buffet dessert table for any gathering. You can make this one day in advance.


  • 3/4 cup uncooked regular rice
  • 4 cups almond milk (OR use 2 c almond milk & 2 c coconut milk)
  • 3 tbls. granulated Monk Fruit (or use your preferred sweetener)
  • 1 tsp. ground cinnamon
  • 2 tsp. vanilla extract
  • 1 cup chopped fresh strawberries (optional)
  • dairy free whipped cream


  1. In 3 qt. saucepan, add the rice, milk and sugar and heat to boiling over medium heat. Stir and reduce the heat and let the mixture simmer. Stir occasionally to prevent the rice from sticking to the pot.
  2. Cook uncovered for about 10 minutes then add in the sugar and cinnamon. You can also add raisins if you wish. Continue to cook another 15- 20  minutes or until rice is tender. Then remove from heat. Cover; let stand 5 minutes.
  3. Cut up the fresh strawberries and keep them chilled.
  4. When ready to serve the rice pudding, scoop 2-3 tablespoons of the cooked rice pudding and place in a serving glass.
  5. Add a scoop of strawberries over the rice pudding, continue to layer the rice pudding and strawberries in the serving glass. You can add as much or as little as you desire.
  6. Top with strawberries for garnish and sprinkle with a little cinnamon.
  7. Serve with non-dairy whipped cream.
  8. Serve warm or chilled.
  9. Cover; refrigerate the remaining pudding.
