Double Chocolate Sandwich Cookies are the perfect fall cookie for Thanksgiving and holiday entertaining. An easy cookie recipe that has pecans and cranberries melted white chocolate drizzle.

For Cookie Sandwich Filling

Instructions

Preheat oven to 375 degrees

  1. In a small bowl whisk together the flour, cocoa, baking soda and salt and set aside.
  2. In mixing bowl add the room temperature butter and sugar and beat until fluffy.
  3. Add in the eggs and vanilla and mix until well blended.
  4. Add in the flour mixture and mix until well blended.
  5. Add in the chocolate chips, nuts and cranberries and gently stir together until well blended.
  6. Drop by tablespoons onto parchment lined cookie sheet, space 2 inches apart, and gently flatten. The cookies will spread.
  7. Bake 12 minutes. Mine baked exactly 12 minutes – time will depend on your oven.
  8. Cool on cookie sheet for 2 minutes and remove to wire rack to cool completely.

For Cookie Sandwich Filling

  1. Melt the white chocolate and stir in the cream cheese and marshmallow fluff.
  2. Stir vigorously until everything is well blended – only takes a minute or two.
  3. Spread on cookie, sprinkle with chopped nuts and then top with the other half of cookie.
  4. Drizzle some melted white chocolate as garnish over the tops of the cookies if desired.

The yield for this cookie will depend on how large or small your make your cookies.
