Maple Glazed Carrots with Almonds is a very easy vegetarian side dish to make any time. This recipe can be served hot or room temperature warm. Great to serve on a party buffet or any day of the year. The maple glaze makes me think of fall, though this easy recipe is always a welcome side dish for any Holiday meal.



  1. In small dish add 1/2 cup dried cranberries and the orange juice. Set aside.
  2. Peel and slice the carrots. Add carrots to a large freezer bag with 3 tbls. water and cook in microwave for 2 minutes. OR you could steam the carrots on the stove if you do not use the microwave.
  3. In medium saucepan melt butter then add the steamed carrots and stir until carrots are coated with butter, approx. 3-4 minutes.
  4. Stir in the orange juice and the maple syrup. Cook for another 2-3 minutes to blend the flavors. Add the nuts if using and stir well, continue cooking for another 1-2 minutes.
