This is a great weeknight dish to make using leftover roasted chicken if you have it available. Just stir fry the vegetables and add in the cooked chicken to heat up with the veggies.
If you are like me, when I cook I always make extra to use for another day. Chicken is one of my favorites to cook extra for another weeknight meal. This week I made a quick broccoli and chicken stir fry. It’s such an easy recipe to prepare.
Another huge benefit to this recipe is that you can add in your favorite vegetables. You can give this recipe a nice Asian twist by using bok choy, water chestnuts, and snow peas. Wow, this would be a delicious surprise dinner.
It’s snowing and the temperatures are well below freezing. I really didn’t want to get stuck in the snow so I had to use the ingredients that I had in the fridge.
Easy Chicken Broccoli Stir Fry Recipe
Easy Chicken Broccoli Stir Fry recipe is a quick and easy weeknight dinner. Stir Fry recipes are always quick and easy. You can add in your choice of vegetables. It’s a delicious recipe you can put together using leftovers as well.

- 1 can chicken broth (or you can use vegetable broth)
- 1/4 cup soy sauce
- 2 tbls. cornstarch
- 1 clove garlic chopped
- 1 tsp. chopped fresh ginger (based on your preference use a bit more or less)
- 1/4 tsp. red pepper flakes (optional- use if you like spicy)
- 2 tbls. avocado oil (or any light oil)
- 2 lbs. boneless skinless chicken breasts cut into chunks or strips
- 2 cups frozen broccoli florets
- 1-2 red peppers, sliced or cut into small cubes
Mix broth, soy sauce, cornstarch, sugar, garlic, ginger and crushed red pepper (if using) in a small bowl until smooth. Set aside.
Heat oil in large nonstick skillet on medium-high heat. Add chicken in several batches; stir fry 5 minutes until cooked through. Remove from skillet.
Repeat with remaining chicken, adding additional oil if needed. Add vegetables to skillet; stir fry 3 minutes. Return chicken to skillet.
Stir soy sauce mixture. Add to skillet; stirring constantly, bring to boil on medium heat and boil 1 minute or until sauce is slightly thickened.
Serve with cooked white rice, or rice noodles, or you can make fried rice cauliflower which I often make.
