When LIFE takes over and you just can’t control the unexpected daily events something has to give. As an ‘older baby boomer’ stresses of aging and other everyday issues become overwhelming.
Often I’m wondering what will I have time to prepare for dinner on days when I’m overwhelmed. I can’t think, and then I’m saying to myself who wants to clean up the kitchen after this long day. Cooking dinner or even baking desserts which is my all time favorite stress reliever is being pushed to the back burner!
Getting to this point has been a difficult decision. I just didn’t know how I should approach this challenge. It has been a trying 6 months grappling to come to this decision. What can I say after cooking for 50 years. Grampy’s taste buds have changed and I’m sure that our doctor approved diet has something to do with this. When the doctor gave us the news to change our diet quite a few years ago, I had no issues coming up with recipes.
Eliminating the high carbs and refined sugar was easier than I thought. However the challenge to get grampy to jump on board has been difficult to say the least.
I really thought as we have gracefully entered into retirement these last 5 years cooking dinner would be easy peasy. Well, I was in for a HUGE surprise. I know over time our tastes buds change. There were certain foods grampy always enjoyed that were the go to meals I made every week. SURPRISE, no longer is Best Old Fashioned Meat Loaf Air Fryer Recipe a favorite, along with quite a few other go-to recipes.
I would often make this Easy Marinara Sauce Recipe on Sunday’s with macaroni/pasta. Also, the occasional chicken parm which I often made using leftover chicken cutlets is also out.
So what do I cook now after 50 years of cooking the basic Italian meals grampy loved all his life? I’m not a big eater (I like small portions), but I’m NOT a picky eater. I’ll cook most anything my family enjoys but this is a new journey.
I have also enjoyed cooking in the kitchen with my grandsons. We are blessed that our family lives only 10 minutes away. It was so much fun for me to stay with them on school holidays and snow days. We would cook and bake together a few times a month, but now our grandsons are quite self sufficient. They can cook their own meals when necessary and two are now in college.
I’m hanging up my KITCHEN IS CLOSED sign and grampy will have to step up to the plate – pun intended! My mom taught us if we wanted something we had to help ourselves. To this day that is still my motto. If grampy is hungry he’ll have to help himself. This just makes perfect sense to me, why should I still be chained to the kitchen?
So, I’m closing my kitchen, though all the recipes I have posted since 2009 will be available for those who like quick and easy and sweet and savory meals. My recipes are family friendly and kid approved.
Over the last 2 or 3 years I’ve made many quick and easy Air Fryer Recipes everyone enjoys. It’s my favorite kitchen appliance when the weather starts getting warmer and we do not want to use the oven.
The air fryer takes the heat out of the kitchen.
